Quinoa tabbouleh

Ingredients
100 g quinoa
Small handful fresh parsley
Small handful fresh mint
Handful of raw tomatoes
1 small onion
Method
- Cook the quinoa as per the packet instructions
- Finely chop the parsley and mint (small pieces, not bruised)
- Dice the tomatoes and drain excess liquid
- Mince the onion very finely
- Stir everything together and serve
50g grilled halloumi and 1 tbsp hummus make great accompaniments to quinoa tabbouleh.
