Quinoa tabbouleh

fresh quinoa tabbouleh with halloumi

Serves 1

Ingredients

100 g quinoa

Small handful fresh parsley

Small handful fresh mint

Handful of raw tomatoes

1 small onion

Method

  1. Cook the quinoa as per the packet instructions
  2. Finely chop the parsley and mint (small pieces, not bruised)
  3. Dice the tomatoes and drain excess liquid
  4. Mince the onion very finely
  5. Stir everything together and serve

50g grilled halloumi and 1 tbsp hummus make great accompaniments to quinoa tabbouleh.
